I have a 40 gal breeder with a pair of ruby red peacocks and a white lab quad. Should I add anything esle? If so, what?

well me id say that is about max cause they are breeding groups could we see a pic of the set up?

You could add a couple more female ruby reds. I would probably keep it to 2 species in this size tank though. I have followed Norm's advice of tank size times 1/2 divided by average size of fish equals max number of fish for a tank. For this tank that would be 40 x .5 / 6 equals 10. The formula basis this on mbuna size but I have found if you go just a little less it works for peacocks as well.

or i would jsut make it one speices breeding tank to that is allways nice
